
Ingredients for 4 people
- Carp fish: 500 g
- Fresh herbs (cilantro and fenugreek), chopped and fried: 700 g
- Garlic, chopped: 5 cloves
- Verjuice or sour orange juice: as needed
- Salt, pepper, turmeric: as needed
- Tomato paste: 1/2 tbsp
Instructions
- Chop and fry the herbs.
- Marinate the fish with garlic, spices, and verjuice or sour orange juice. Let it rest for 15 minutes, then cook it with a little water.
- Once cooked, remove the bones and skin from the fish and separate the meat.
- To the fried herbs, add tomato paste, garlic, verjuice or sour orange juice, and some water. Let it simmer.
- After about 1 hour, add the fish to the stew and let it cook together for 10–15 minutes.
- Serve this dish with Gilani-style rice.
