Traditional and delicious Gilaki dish with fish

Ingredients for 4 people

  • Carp fish: 500 g
  • Fresh herbs (cilantro and fenugreek), chopped and fried: 700 g
  • Garlic, chopped: 5 cloves
  • Verjuice or sour orange juice: as needed
  • Salt, pepper, turmeric: as needed
  • Tomato paste: 1/2 tbsp

Instructions

  • Chop and fry the herbs. 
  • Marinate the fish with garlic, spices, and verjuice or sour orange juice. Let it rest for 15 minutes, then cook it with a little water.
  • Once cooked, remove the bones and skin from the fish and separate the meat.
  • To the fried herbs, add tomato paste, garlic, verjuice or sour orange juice, and some water. Let it simmer.
  • After about 1 hour, add the fish to the stew and let it cook together for 10–15 minutes.
  • Serve this dish with Gilani-style rice.
